If you just want ESPNU for the Vandy game, you might look into one of the streaming cable providers (Sling, Fubo, YouTube TV, etc). I know Fubo has a free trial, so could get it just for the game. It doesn't seem our game will be on ESPN+, and I don't think you can get ESPNU as a stand alone.
